CHEESE
We make our cheese on-site out of milk straight from our own cows and goats. Many of the cheeses are traditional Swiss mountain style. We make montañita, manchego, gouda, camembert, ricotta, cremoso, feta, and cabra (goat) cheeses, as well as yogurt.
